This course incorporates nationally recognised unit SITXFSA002 – Participate in safe food handling practices.
This course provides skills and knowledge required to handle food safety during the storage, preparation, display, service and disposal of food in the hospitality facilities such as restaurants, cafes, hotels, event venues or caters. It requires the ability to follow predetermined procedures as outlined in a food safety program.
Upon completion of this unit the food handler can undertake a role of a Food Safety Supervisor in the organisation.
Participants will learn how to:
- Follow food safety program.
- Store food safely.
- Prepare food safely.
- Provide safe single use items.
- Maintain a clean environment.
- Dispose of food safely.
Who is this course for?
Food handlers must comply with the requirements contained within the Australia New Zealand Food Standards Code.
This course is for any food handlers who directly handle food during the course of their daily work activities and is responsible for supervising a food safety program. This includes cooks, chefs, caterers, kitchen hands and food and beverage attendants.
Prerequisites
While there are no prerequisites to undertake this course, it is highly recommended that you complete the unit SITXFSA001 – Use hygienic practices for food safety before commencing this course.
Assessment
A range of assessment methods may be used to assess the practical skills and knowledge of participants required for food safety including multiple choice questions, role plays/scenarios, case studies, quizzes or oral questioning to assess the knowledge component of this course.
For skills component of the assessment, participants are required to demonstrate use of use of safe food handling practices in food handling work functions on at least three occasions in an operational food preparation area, i.e. either in an industry workplace or a simulated industry environment. Participants are required to submit a Third Party Report (completed by your nominated workplace supervisor for example) to meet this requirement which will be used to assess participant’s competency in this course. Certification
Upon successful completion of the course, participant will receive a nationally recognised Statement of Attainment.
